Thirty wines open across the courtyard, chosen for the height of summer. This is a walk-around tasting — arrive any time, work through the wines at your own pace, in any order you like. There's no sit-down session and no fixed program. Pip will be moving through the evening and happy to talk through anything that catches your attention. Everything on the table is available to buy and take home on the night. In the unlikely event of poor weather, we'll move inside — the tasting goes ahead regardless.

Actually, yes. Researchers call it cross modal perception — the way everything around you shapes what's in the glass. Fresh air heightens your sense of smell, which does most of the work in tasting. Natural light lets you see the colour properly. A relaxed setting puts you in a better frame of mind, and mood genuinely changes how flavours land. On a warm July evening in the Blas courtyard, with thirty bottles open and no schedule to keep to, you'll taste things in those wines that you'd miss entirely under a roof.
